On our snow day, guess what we did…that’s right, we cooked. For breakfast we made our old standby – the fried egg sandwich. But we did it with a few kitchen toys and a little pecorino cheese for flair.

Fried Egg Rings

Our recipe:

1. Fry some thick peppered bacon in a cast iron skillet.
2. Put crispy bacon on a platter with paper towels to soak up grease.
3. Keep the bacon grease and position rings in the skillet. Let them heat up a bit.
4. Crack eggs and pour each one directly into the ring.
5. Meanwhile, toast up some Ezekiel Bread – the sprouted grain English muffins
6. Flip eggs over once if you want to fry both sides (my dad likes only one side fried so that the yoke stays gooey).
7. Stack egg and then bacon on the bottom half of a muffin.
8. Top with shredded pecorino cheese and place English muffin top over cheese. Let melt a bit.
9. Enjoy!

The awesomeness that is a fried egg sandwich.

 

Wonderful with espresso or a French pressed pea body coffee.
